
INGREDIENTS
- 1 * small can sweetcorn
- handful baby spinach leaves
- 50g plain flour
- 1/2 teaspoon - baking powder
- 1 * egg
- 50ml milk
- 1 * crushed garlic clove
- 1 * spring onion

This is a quick and easy recipe I initially made for my toddler, but I made so many I also used them the next day as a snack on my hike. If you are making these for a toddler, stick to the low salt versions. But if it is for adults, definitely add some salt, pepper and maybe even a little chilli for a little kick.
Method
- Step 1: blend all of the ingredients, Until you have a fairly smooth paste.
- Step 2:
- heat up a little oil in a frying pan. Once hot, Spoon up a little of the mixture and place it into the pan, if there is space add a few more, making sure they do not touch.
- Step 3: Flatten the mixture with a spatula, to make sure it cooks evenly. Fry for approx 1 minute on each side
- Step 4:
- Remove the cooked fritters and place on some kitchen roll to allow any oil to soak up.
